fresh eggs!

The girls laid these eggs before noon today. If you buy eggs at a supermarket, you are not getting fresh eggs. I don't care if they are free-range, organic or whatever the carton says...they are not fresh. Most supermarket eggs are at least 3 weeks old when they are delivered to the store. I don't even have one egg in my frig that is 1 week old. If you notice on the carton, it doesn't tell you what day the eggs are laid on...it tells you a best by date. I don't know to many people who would actually buy eggs at the store if they knew when the eggs were actually laid. Beware if they are running a special on eggs...think about how old those eggs are! If you look on the end of the carton there is a number...that number is the day of the year that the eggs were actually laid. For example, if the number is 126, that means they were laid May 6th and that's if there were 28 days in February. Just thought I would post a little info. about eggs.

I definitely agree with Rita! Thank you again for sharing the bounty that your hens lay :). There is such a difference in the ones from your hens, and the ones from the store. I couldn't believe when I read that the egg farms don't even have to grade the eggs for up to a month after they laid before they go to the store to be sold! Alton Brown gives you some good information in his books for any interested....
